Drink it now or cellar for up to 10 years. No need to decant it. The Domaine Vincent Girardin is located in Meursault, in the Côte de Beaune, in Burgundy. It was founded in 1980, when Vincent Girardin, who came from a family of Santenay winemakers, began to produce wine independently from two hectares of vineyards inherited from his parents. Soon, the quality of his wines was recognized worldwide and allowed him to expand his business by focusing mainly on the great whites and reds of the Côte de Beaune (Meursault, Puligny Montrachet, Chassagne Montrachet, Saint Aubin, Santenay, Savigny Les Beaune, Aloxe Corton, Volnay and Pommard). In 2012 Vincent Girardin sold his business to Mr. Nié, Président de la Compagnie des Vins d'Autrefois in Beaune. The Cuvee Saint Vincent Blanc comes from 100% Chardonnay grapes. The 35-year-old vines, located in the Côte de Beaune regional appellation area, grow on clayey limestone soils. The grapes are pressed, then decanted and the must is placed in 500-liter French oak barrels in which fermentation takes place. Refinement lasts 10 months on the lees. One month before bottling, the wine is placed in stainless steel vats for blending. The wine shows intense aromas of white fruit, peach, jasmine, and some hints of citrus. In the mouth it is lean and sharp, fresh, and delicately mineral. It is ready now, but can stay a bit longer in the cellar. Have it with white fish served with a white sauce, or with poultry.
